Many food products are prepared from Jackfruit

Farmers can earn by selling jackfruit, but to increase their income, knowledge of its value-added products is necessary. Jackfruit pickle is made. After boiling and roasting jackfruit seeds, their flour can be prepared. The Bangalore-based ICAR-Indian Institute of Horticultural Research has developed three food products from jackfruit.

Jackfruit Juice – A drink prepared from jackfruit. Jackfruit pulp is prepared into a liquid using a fermentation process. Then the serum is separated from this liquid and water is added in a certain proportion to this serum. It can be stored in glass bottles at room temperature for up to 6 months. 2.5 to 3 liters of juice is obtained from one kg of jackfruit. It has been named Arka Halsuras. There is no added sugar or other preservatives in this drink. The sweetness in this drink is due to the fructose and sorbitol present in it. It contains 15-18 mg of vitamin C, 2.1-2.4 mg of carotenoids, and 1.1-1.2 mg of antioxidants per 100 ml.
